I had to dial it back when I used the Rotel with habeneros and pepper jack cheese instead of Montery Jack cheese. I never really considered how much the pasta absorbs the liquid! I thought this was delicious. It was a lil spicy for my husbands taste but he still loved it. So easy. Such a uniquely tasting dish. We LOVE it! Huge hit! My boyfriend kept going back for more. I had to warn him to take a break or he would need an Antacid! It was a little runny, as most comments state. I left the lid off for an extra 5 minutes….. Turned out to be a dynamic spicy cheesy delicious dish! Holy Moly!!!!!! This was delish. Terrific weeknight meal. I still want the creamy consistency, but not all of the calories.

As someone who cooks a lot, I would say you should experiment with doubling it at first. Normal pasta is cooked with a lid off. You could however cook a couple of batches and put it in two casserole dishes to finish off in the oven.

It should thicken like that. I make it all the time and this has worked for me. Finally got around to trying this recipe — big hit with the family. It smells amazing — quick question. I added two cups as the recipe said and it seems pretty liquid-y. It makes it last a little longer, too ;.
